Job description

We will be launching our must anticipated small plate restaurant in Lewes once lockdown 3 is over.

We are looking to build an experienced team around our award winning Executive Chef Jake Swayne.

Our whole team is expected to be versatile and be able and happy to work in the Lewes Cafe in the daytimes, Evenings in our small plate restaurant and if needed in our flagship restaurant in Brighton.

  • Experience as a Sous Chef in a similar role is required. Working with Vegan food is a bonus.
  • Stable career history with sustained employment periods in each role
  • A real passion for food and creating amazing dishes using only plants.
  • The confidence to deputise for the Exec Chef if their absence, supporting with the efficient running of service
  • Dedication, motivation and positivity
  • Flexibility to cover shifts as required. We plan to open 3 nights a week to start.
  • Passion to deliver outstanding dishes whilst demonstrating good food knowledge. Keen eye for extreme detail,
  • The ability to establish rapport and deliver high standards of service with a genuine and approachable manner
  • Ability and presentation to work in a very open kitchen
  • Ability to communicate confidently with front of house

Job description

With a successful launch we are now looking for a passionate person to take on the role of Cafe Sous Chef.

Our whole team is expected to be versatile and be able and happy to work in the Lewes Cafe in the daytimes, Evenings in our small plate restaurant and if needed in our flagship restaurant in Brighton.

Responsibilities

  • Commitment to quality service, and food and beverage knowledge.
  • Understanding of Recipes
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices. 
  • Portion, arrange, and garnish food, and serve food to waiters or patrons.
  • Regulate temperature of ovens, broilers, grills, and roasters.
  • Substitute for or assist other cooks during emergencies or rush periods.
  • Estimate expected food consumption; then requisition or purchase supplies, or procure food from storage. 
  • Bake breads, rolls, cakes, and pastries Core Competency

BRIGHTON – PART TIME KP

Job description

The Roundhill will be reopening soon and we are looking for an experienced new KP at The Roundhill. 
 
The Roundhill is an award winning Vegan pub and expectation is high. Experience as a Kp is a must.
 
Task will include – 
 
  • Taking in and putting away deliveries
  • Maintaining a clean kitchen -Washing up
  • Menu Prep
  • Running cold section, providing back up for chefs and washing up during evening service

We are a tight team that works in a small kitchen under pressure. A passion for Vegan Food and Drink is a bonus.

The position will be full time, between 30/35 hours over 3 days. There is often extra cover work to pick up.
